Bull Pub - Great Food in Cowley, Wyoming

Located right off of the main road that cuts through Cowley, Wyoming is a warm and welcoming restaurant and bar called Bull Pub. It is home to great food and creativity. We found these guys on social media and after reaching out to them we set up a time to meet the general manager, Mandee and the head chef, Sam Wright. 

The Ambiance

The restaurant is warm and inviting with hard woods, barrel stand tables, beautiful art and detailing. With large windows the space is filled with natural light. The restaurant offers a dining area, a separate bar and a large outdoor patio with a stage for live music. The facility was designed for visiting and enjoying good company with its offerings and large community table. We really appreciated the thought that went into the design of the restaurant and bar. 

The chef

Chef Samantha “Sam” Wright hales from the UK and brings with her, her French trained influence to our Wyoming fare. Chef Sam shared with us that the menu changes seasonally with a few staple items that are on the menu year round. When asked how she ended up in Cowley we learned that for ten years she spent six months as a ranch chef here in Wyoming and 6 months as chef for Lloyd’s of London. She now lives here full time and call’s Bull Pub home. What is she most known for? Why her fish and chips of course! Which are exceptional, if I do say so myself. Chef Sam orders local products whenever possible and has a large garden at her home and uses produce she grows herself. It is also worth noting this is a scratch kitchen, meaning all the sauces, dressings and food are made from scratch in house. 

 
 


The food

The spring menu was launched at the end of March. As we shared, it changes with each season. It is a small menu, but that allows Chef Sam to offer approximately 6 daily specials as she gets in special ingredients. The specials are typically 3 appetizers and 2 or 3 entrées. Why is this important? Well, to bring a variety of ethnic foods to Wyoming. As a world traveler, Chef Sam strives to bring unique items to her community that wouldn’t otherwise exist. So watch their social media for the daily specials! Lastly, in regards to the food, Chef Sam offers 3 to 4 scratch made desserts to choose from. Each are made fresh and rotate based on available ingredients.

The flavors

When I say we enjoyed our meal, we enjoyed it. Here is what we ordered:

For the appetizer 

We started with the deviled eggs, which we learned were Chef Sam’s grandmothers recipe. Delicious and offered a light smokiness to the deviled yolks. We also ordered the Crab, Shrimp & Avocado Pot. This dish comes with avocado spread and a shrimp and crab salad. We spread the avocado on the artisan crackers and topped it with the seafood salad. It was amazing as well. Light, fresh and well seasoned. Perfect for spring! 

For the Entrée 

We ordered quite differently. Steve ordered the fish and chips. I was able to get a bite and it was fantastic. The Walleye fillet was massive and the breading was out of this world. The fresh cut fries were crispy and completed Steve’s dish. I ordered the Greek Chicken Flatbread and I will never regret it. The dish was fresh and full of amazing produce. The chicken had a perfect balance of marinade/seasoning and the house made tzatziki sauce  was incredible. We enjoyed every bite. 

For dessert

From the dessert options of the day we chose the peach crumble with vanilla gelato. It was served to us warm and the peaches were juicy and delicious. The crumble was delicate and didn’t take over the dish. It was well balanced and the perfect end to our meal. 

 
 

The bar

The bar is decent sized and offers TV’s, music, darts and more fun! The full bar offers specialty drinks including the two we snapped a photo of. First is the Lavender, Lemon G & T, a spring inspired gin and tonic that is sure to please. Secondly was the Blackberry Margarita with fresh lime and house made blackberry purée. We love that the scratch kitchen trickles into the bars craft cocktails. We agree, this would be a great place to spend the evening.
