Okay, honestly we weren’t in Gillette too long so didn’t have a plethora of meals while visiting. We did, however, have two fantastic meals while we were there. Both of which we enjoyed so we didn’t want to miss an opportunity to share them with you all.

Fiesta Tacos & Tequila 

Located in downtown Gillette, this Mexican eatery serves up fantastic flavors. The menu is large; however, don’t get overwhelmed. You can narrow it down with these recommendations from what we enjoyed. 

Birria Tacos

This dish! Whatever you have planned, cancel it and head to Fiesta Tacos & Tequila - especially if you have never enjoyed a Birria Taco before. These were absolutely the best tacos I have had in a long, long time. Birria is a beef stew that hails from the Mexican state of Jalisco. It is packed with savory flavors and the most tender shredded meat. The flavors are savory and not spicy - so this dish can be enjoyed by all. The stew at Fiesta Tacos & Tequila was made with beef rather than the traditional goat. Birria is traditionally served at baptisms, weddings and other special occasions - which is why it is not often found on a menu. Can you imagine ordering Thanksgiving dinner at a restaurant? While the stew can be served in a bowl, the best way to enjoy this dish is made into a taco. The corn tortillas are grilled (think quesadillas) and drizzled with the stew broth on both sides while the tortilla heats up. Then it is filled with meat, cheese, fresh onion, and cilantro, folded in half and put back in the pan to be drizzled with broth until crispy on the outside and gooey and delicious on the inside. It makes for a crispy, flavor packed taco. The tacos are served with the Birria broth for dipping.

Burrito

The burrito is fantastic and larger than life. The chefs at Fiesta Tacos & Tequila aren’t joking around with the food they serve. Packed with flavor and the size of a plate you won’t leave this restaurant hungry.

Langua Tacos

While Steve is a born and raised native to Wyoming, we did spend about a decade in southern Arizona. During our time there we enjoyed many traditional tacos and foods. Langua tacos are simple. Homemade tortillas, slow cooked Langua (beef tongue) and served with fresh diced onions and cilantro. We have not had these since moving back home. Guess what? Fiesta Tacos & Tequila has them! If you are looking to try something new then order up an a la carte Langua taco. The meet is tender and juicy!

Ranch & Roost

You know how people get obsessed with In & Out burger? We just found their biggest competition and it is locally owned and operated in Gillette. While enjoying some time over at Big Lost Meadery & Brewery we walked across the courtyard and ordered ourselves, what was quite possibly, the best smash burger of all time. There is no denying or arguing with their tag line, “Simple and freakin’ delicious”.

The Burger

Most often burgers come with a single patty or you can choose a double… not at the Ranch & Roost! These guys serve up massive, juice, delicious smash burgers that will more than fill you up. While ordering you select the toppings, preferred condiments, grilled or raw onions, tomato, lettuce… you get the idea. Then you choose the sides…

The Sides

The fries are fantastic. You can order plain fries in small, medium, or large OR you can get the garlic fries. A single order of garlic fries could feed an army. It comes in box filled to the brim. They are cooked perfectly and the garlic and herbs are mixed in so each bite is flavor packed. You can also select a dip! There are four flavors, Buttermilk Ranch, Honey mustard, Crave Sauce, or Polynesian Sauce. These sauces are perfect with the chicken! 

We did not try the chicken, but word on the street is the chicken is amazing. With a light breading and available in strips or sandwich. The best part is they walk over and deliver the food when it is ready. Just let them know you are over at Big Lost across the courtyard!
