One of the best things about camping to us is waking up with a hot cup of coffee or settling down after a long day’s hike by a toasty campfire and taking in the simplicity of camp life. But simplicity doesn’t mean you can’t cook a great meal!

Whether you’re tent or RV camping at one of our many Wyoming State Parks, or off the beaten path in the backcountry, these easy camp meals and recipes will be sure to hit the spot!

Breakfast in the Bighorns

As they say, breakfast is the most important meal of the day, and when you’re preparing for a long day of adventures, we couldn’t agree more. With a percolator of Mystic Monk Coffee steaming away on the campfire, Sam and I prepared a yummy breakfast of fresh fruit, granola, and Prairie Potatoes to help us jump start the day.

Prairie Potatoes

I love new baby red potatoes. They are simple to prepare, and you don’t need much to make them delicious – a win-win for camping! Basic camping kitchen supplies and few ingredients are all you need. You don’t even need to bother peeling the skin. This preparation will make them crisp and flavorful – delicious. 

Ingredients:

  • 1 lb. small red potatoes (cut in half or quartered to make 3/4-inch-thick pieces)

  • 1 tablespoon of butter

  • 2 tablespoons olive oil

  • 2 tablespoons Prairie Potato seasoning by Wild West Spice Company

  • Supplies: 

  • Cast-iron skillet

  • Cutting board

  • Knife

  • Spatula 

  • Tinfoil 

How to Make Sauteed Prairie Potatoes: 

  1. Start by washing your red potatoes and drying. We did this at home prior to packing in an airtight container.

  2. Cut potatoes into 3/4-inch-thick pieces by halving or quartering. 

  3. Heat a cast-iron skillet over medium-high heat and add 1 Tbsp butter and 2 Tbsp olive oil. Once butter is melted and hot, arrange potatoes in the skillet, cut-side-down in one layer. 

  4. Add 2 Tbsp of Prairie Potato seasoning, stir to distribute seasoning evenly, and arrange potatoes in one layer.

  5. Cook uncovered and undisturbed 8-10 minutes or until golden brown crust forms on the bottoms.

  6. Turn potatoes then cover with foil and cook another 5 minutes or until golden brown on the second side and fork tender.

Turning Street Tacos into Trail Tacos

You might call us taco-holics, and we’re ok with that. So, naturally, tacos always make our camping trip meal list. Depending on your style of camping, you can dress these “trail tacos” up or down depending on the space and time you have available. 

Since tacos require chicken or red meat, when on a pack trip, we typically cook these on our first day and pack a frozen package of meat right before setting off on our adventure. 

Ingredients:

  • 1 lb. ground elk (sub ground beef or shredded chicken if preferable) 

  • 1 tablespoons olive oil

  • 2 tablespoons Taco Seasoning by Hi Mountain Seasonings

  • 1/2 cup of beer or water

  • 1 cup shredded pepper jack cheese

  • 1/2 cup black olives

  • 1 7 oz can of hot salsa casera or similar

  • 10 street taco flour tortillas

Supplies: 

  • Cast-iron skillet

  • Cheese grater

  • Spatula 

  • Tinfoil 

How to Make Elk Trail Tacos: 

  1. Heat a cast-iron skillet over medium-high heat and add 1 Tbsp olive oil. Once pan and oil are hot, add ground elk.

  2. Cook uncovered, stirring frequently until browned.

  3. Wrap tortillas in foil and place on campfire grate or rocks around campfire to warm. Flip halfway through warming.

  4. Add 2 Tbsp of Taco Seasoning and 1/2 can beer (we used Coors Light) to browned elk.

  5. Continue to stir and cook until fully cooked.

  6. Grate pepper jack cheese and slice black olives. Set aside.

  7. Remove elk and tortillas from fire. 

  8. Fold tortilla in half and spoon desired amount of elk, cheese, olives and salsa on top.

  9. Repeat
